Know exactly what you are walking into? Interview employees if possible. Perhaps pop in for visits and watch the managers and what they do. A restaurant Manager is a working manager and should be readily available at peak hours of operation. For example breakfast 8am-10am, lunch 11am-2pm and dinner 5pm-7pm do you see the managers on the floor working and available.
