Make sure you realize that you will start out being bottom man on the totem pole and because this be stuck working and being in charge of a multitude of things you don't see more tenure cooks doing. In time hard work will pay off and hopefully never stop learning.

Cook in a club.
General/Institution Cook:
Pros: Creative, fun, easy, most co-workers are good. Good head chef. Overtime rates are very good.
Cons: Top management, including one chef, treats you like shit. Club is known to treat its workers like shit.
Conditions in kitchen too hot due to shitty extraction and shitty aircon systems.
Basic pay is not great.
