Pros: You learn a lot about mechanical, electrical, and process design considerations and techniques. There are a lot of times when you have to be able to adapt outside of your comfort zone to solve problems you may not have had classes or experience in. The learning curve is steep but worthwhile.
Cons: Amount of work is very dynamic. Some days are busiest ever, some are much more laid back and you have free time to research and work on smaller projects.
